Classy Casserole

Yummy, yummy, yum, yum, yum!! This is absolutely one of my favorite supper dishes. I don’t know how long we’ve been making this, but we’ve had this recipe for a LONG time. My favorite part is the melted and crispy mozzarella cheese on the top. YUM!! And my whole family loves this. And now I can make it all by myself. Which, this has just started since we’ve been in Indonesia. Plus it’s so simple We got this also from the Sunlight Cooks. So here it is.

        Classy Casserole
4 cups mozzarella cheese, shredded
1 large jar spaghetti sauce
1 pound ground beef
16oz cream cheese
1 cup sour cream
2 packages egg noodles

  • ·         Brown ground beef. Stir in spaghetti sauce.
  • ·         Cook egg noodles according to packet directions, drain, stir in cream cheese and sour cream (make sure the noodles are hot still) (well, duhh). With a spatula, split the noodle mixture in half.
  • ·         Preheat oven to 190C (350F).
  • ·         Grease bottom and sides of a 9x13. Put half of noodles in the greased pan. Put all of meat mixture on top of the noodles, then half of cheese. Pour on top the remaining noodles and lastly the rest of the cheese.
  •   Cover with foil and bake for 25 mins. Then take off foil and bake another 10-15 mins.

Creamed Chicken

I love this recipe, but I absolutely DON’T like making it. Number 1: It hurts my shoulder just stirring for 5 whole mins. Number 2: It’s completely BORING. But I’m not trying to keep you away from this recipe,  I’m just telling you I don’t like making this. You might like making this I sure don’t know. I got it (or my mom got it) from the Sunlight Cooks. And here it is.

        Creamed Chicken
4 Tablespoons butter
4 Tablespoons all-purpose flour
1 teaspoon salt
dash of pepper
2 cups milk
2 cups chicken broth
4 cups chicken, cooked and shredded

·         Melt butter in a large wok on the stove. Stir in flour, salt, and pepper.
·         Stir in milk and broth with a whisk til’ smooth.
·         Bring to a boil and boil 5 mins, stirring constantly. Add chicken and heat through.

Yummy Choco-Peanut Butter Pie

This a guest post from my friend Hannah Harper. ENJOY!!

Yummy Choco-Peanut Butter Pie

Though I'm not a great photographer, I have to say, these are better than they look. After putting all the work over it, slaving over a hot stove, I'm very much pleased in the results.

Okay! So I just had to mix the stuff together, melt the butter and chocolate, and refrigerate. Well, the photo shoot was hard!
Fine! I got to eat the piece of pie and drink the tea. Fitting reward. But I still...
Um.. does finding and editing the recipe count?
Well, I know it isn't pretty, but the first piece never is! Unless you are some Martha Stewart, which I doubt. But it still looks sweet! (Pun intended)
Presenting: tonight's dessert (though you might not be able to wait that long...):
Peanut Butter Choco Pie!

  • 1 2/3 cups finely crushed biscuits (If you want your peanut part a little crunchy, leave in some large pieces)
  • 3- 3 1/2 cups sifted powdered sugar (you might be able to use less)
  • 1 cup creamy or crunchy peanut butter
  • 1 cup melted butter
  • 1 cup melted chocolate
Mix the powdered sugar and biscuit crumbs and stir well. Add the butters and stir till creamy. Fit into a pie pan, and pour on the chocolate. Refrigerate until the chocolate has set, then serve cold.

Banana Cake

Everyone loves this recipe. Indonesian or not. Our friends (Indonesian) tasted this and asked if I could make on for their family. I made a whole 9x13. The mother, Ibu Bedah, was the one that asked for the 9x13. When we brought it over to them, her husband, Pak Lely, and their son, Rizal, answered the door. It was funny because apparently they had no clue that Ibu Bedah had asked us to make it. They were so surprised to see plate after plate come. BTW, we eat this as a breakfast food. We got this from The Wycliffe International Cookbook. Here it is.

        Banana Cake
½ cup oil
2 cups white sugar
4 eggs
6 medium-large bananas (if using real small bananas use 7 or 8)
1 teaspoon vanilla
2½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup milk

·         Combine and beat the oil, sugar, and eggs. Add and mix well bananas and vanilla.
·         In a separate bowl, combine flour, baking soda, and salt.
·         Preheat the oven to 180C (350F).
·          Add alternately, with the milk, to the banana mixture, stirring well. Then beat. Pour in a greased 9x13.
·         Bake for 20-40 mins.

Substitute For..... Apples

I don’t know if you can do this in America or not. Here is one of the veggies you can get a lot of. And it is one of the best replacements for apples! Here it is.

        Substitute For….. Apples

Labu siam (chayote squash)

  •          All you do is use (un) (maybe)cooked labu siam(BTW, that is the pic above), That is it.
